The Toasted Yolk Cafe to open first Kyle location at Sprouts-anchored Brick and Mortar District

A new brunch entrant is preparing to join Kyle’s expanding north-side retail corridor
The Toasted Yolk Cafe, a Texas-based breakfast-and-lunch chain, is planning its first Kyle location inside the Shops at the Brick and Mortar District, a Sprouts Farmers Market-anchored retail center near the intersection of FM 1626 and Kohlers Crossing. The restaurant is listed for 150 Heroes Memorial Drive, Suite D-100, in a development that has been adding new tenants as surrounding residential growth accelerates south of Austin.
The Kyle store is expected to open by late June 2026, following a construction timeline that is scheduled to begin in late January and run through the end of April 2026. The buildout reflects a broader pattern in the region: established restaurant brands increasingly following grocery-anchored centers into fast-growing communities along the Interstate 35 corridor.
What is being built, and where it fits in the development
The Shops at the Brick and Mortar District is a four-building, ground-up retail project on about 4.77 acres. Publicly released project details describe a 23,256-square-foot Sprouts Farmers Market as the anchor, plus three additional retail buildings totaling roughly 18,325 square feet. The shopping center sits within Kyle’s larger Brick and Mortar District, a mixed-use area that has been marketed as a connected neighborhood with homes, parks, trails, and commercial space.
Planned location: 150 Heroes Memorial Drive, Suite D-100, Kyle
Target opening window: Late June 2026
Construction window listed for the restaurant: Late January 2026 through late April 2026
Who is behind the Kyle location
The Kyle cafe is being developed by franchisees John and Miriam Diaz. The pair are Houston-area business operators and have described their interest in Kyle as tied to repeated visits through the city and its ongoing growth. Their decision adds to a franchise-driven expansion model for the brand, which has scaled across multiple Southern markets through local operators.
For Kyle, the new restaurant signals continued momentum for destination-style retail clusters built around daily-need anchors like grocery stores.
Menu positioning and brand footprint
The Toasted Yolk Cafe’s menu centers on breakfast, brunch, and lunch staples, including its “Arnold” lineup—poached-egg Benedict-style plates—as well as breakfast sandwiches and a beverage program that includes coffee and brunch cocktails such as mimosas. The company was founded in Texas in 2010 and, as of late 2025, reported operating 49 locations across the South, with additional units in development in several states.
The planned Kyle opening arrives as the Brick and Mortar District continues filling out with a mix of dining, wellness, and service tenants—an approach increasingly common in suburban growth markets seeking to cluster everyday errands and restaurant visits into a single trip.
