Aburi Tora opens at EastVillage in Austin, adding tech-forward Japanese sushi dining to Parmer Lane

A new sushi concept lands in Northeast Austin
Aburi Tora, a Japanese restaurant built around a high-tech, made-to-order delivery system for sushi and small plates, has opened in EastVillage, the large mixed-use development along East Parmer Lane in Northeast Austin. The restaurant began serving customers Feb. 7 at 3500 E. Parmer Lane, Suite 8110.
The opening adds another dining option to EastVillage as the project continues to build out retail and residential components in Austin’s Northeast tech corridor. EastVillage is planned as a 425-acre community with housing, hotels, office and lab space, and a retail and restaurant town center anchored by public green space and event areas.
How the “sushi concierge” model works
Aburi Tora is positioned as a modern take on kaiten-style service. Instead of selecting plates from a public conveyor, diners place orders on a table-side tablet. Dishes are then routed through a network of concealed lanes and delivered directly to the table from the kitchen, a setup designed to keep service moving while maintaining made-to-order control.
The restaurant’s menu centers on sushi, including flame-seared preparations and pressed, rectangular “oshi” sushi, alongside nigiri, sashimi, rolls, and a range of hot and cold Japanese small plates. Beverage options include sake and cocktails.
Who is behind Aburi Tora
Aburi Tora is part of the broader Aburi Restaurants group, which operates multiple Japanese concepts in Japan and Canada and has been expanding its footprint in Texas. In Austin, the group is also behind Aburi Oshi Sushi, a separate concept that introduced flame-seared and pressed sushi styles to local diners through a smaller-format operation before expanding to a stall at downtown food hall Fareground.
Why EastVillage is drawing restaurant openings
EastVillage’s tenant mix has been marketed around everyday retail and dining alongside fitness, entertainment, and services. Publicly announced concepts for the broader development include national chains and local operators, reflecting a strategy common to master-planned town centers: concentrate food, retail, and activities in a walkable core to serve nearby residents and workers.
With Aburi Tora now open, EastVillage adds a full-service sushi destination that leans on automation and a standardized ordering flow—an approach that is increasingly common in high-volume dining formats, but still relatively new in Austin’s sit-down sushi landscape.
